Zesty Red Snapper

Approximate cooking time: 20 minutes

Serves 4

Ingredients

  • 1 1/2 lbs red snapper
  • 1 cup fresh mushrooms, diced
  • 1 lemon, squeezed
  • 1/2 tsp paprika
  • 1/8 tsp cayenne
  • 1/2 tsp oregano
  • salt and pepper, to taste

Directions

  • Pre-heat oven to 400 degrees.
  • In a small bowl mix paprika, oregano, cayenne pepper, salt and pepper. Squeeze lemon juice over both sides of fish.
  • Rub both sides of fish with herb mixture. Put fish in a non-greased baking dish.
  • Cook mushrooms in a medium sized pan in remaining lemon juice over medium heat for about 2 minutes or until hot. Pour mushrooms and lemon juice mixture over fish. Cover and bake 15 to 20 minutes.
