Swiss Baked Sole

Approximate cooking time: 25 minutes

Serves 4

Ingredients:

  • 1 1/2 lbs sole fillets
  • 1/2 (cup) Swiss cheese, shredded
  • 3 (tablespoon) butter
  • 1 (medium) onion, sliced thinly
  • 1/2 (pound) fresh mushrooms, sliced
  • Pinch (to taste) Salt
  • Pinch (to taste) Pepper
  • 1/2 (teaspoon) nutmeg

Directions:

  1. Preheat oven to 400 degrees. Butter a 9″ shallow baking dish.
  2. Melt butter in skillet. Saute mushrooms and onions over medium heat until tender and translucent; about 5 minutes
  3. Place fillets in buttered baking dish. Season fish with salt and pepper. Spoon the onion and mushroom mixture over the fillets. Top with shredded Swiss cheese.
  4. Cover with aluminum foil and bake 20 minutes. Remove foil and place under the broiler to brown the cheese; about 2-3 minutes. Serve immediately.
