Spinach Salad

Makes a side salad for two.

Approximate cooking time: 15 minutes

Ingredients

  • 1 bunch fresh spinach
  • 1 hard boiled egg, chopped
  • 1/4 red onion, chopped
  • juice of 1 lemon
  • 2 Tbs olive oil
  • freshly ground black pepper

Instructions

  1. Wash spinach well, drain and chop.
  2. Let leaves sit for a few minutes and then squeeze out excess water.
  3. Put spinach in a medium bowl and add green onions, lemon juice, oil and pepper.
  4. Toss and serve.
