Spinach and Onion Quiche

Crustless Spinach, Onion and Feta Quiche

Approximate cooking time: 40 – 50 minutes

Ingredients

  • 5 eggs, slightly beaten
  • 1 large red potato, diced
  • 1 1/2 cup cheddar cheese
  • 1/2 cup grated parmesan cheese (optional)
  • 1 cup spinach, washed and drained
  • 1 white onion, diced
  • 1 cup milk
  • salt and pepper to taste

Directions

  • Toss cheddar cheese, spinach, onion, milk, eggs, diced potatoes, parmesan cheese (optional), and pepper; mix well.
  • Pour into pie pan.
  • Bake at 350* for 50-60 minutes or until set.
