Spiced Sea Bass Fillets

Approximate cooking time: 15 minutes

Serves 4

Ingredients:

  • 4 (6 oz) sea bass or striped bass fillets, with skin on
  • 1/2 tsp ground coriander
  • 1 tbsp honey
  • 1 tbsp Dijon mustard
  • 1 tbsp olive oil
  • salt and pepper, to taste

Directions:

  1. Combine honey and mustard in a small bowl. Brush the skin of the fillets with the oil and then place them on a plate, skin-side down. Brush honey mixture onto top of each fillet. Sprinkle each fillet with the coriander, salt and cracked peppercorns.
  2. Preheat the grill to medium, then oil the grill. Place the fillets on the grill, skin-side down. Cover and cook for 5 to 10 minutes or until cooked through. Serve immediately.
