Southwestern Rib Eye Steak

Approximate cooking time: 20 minutes

Serves 4

Ingredients

  • 4 (8.0 ounce, 1 inch thick) rib eye steaks
  • 1 onion, diced
  • 2 bell peppers, red and green, diced
  • 2 poblano peppers, seeded and diced
  • 2 garlic cloves, smashed
  • salt and black pepper, to taste
  • 3 tbs extra virgin olive oil

Directions

  • Rinse and bring steaks to room temperature. Rub with olive oil (or coconut oil) and season with salt and pepper. Preheat grill to high heat.
  • Grill steaks, covered 16-18 minutes for medium-rare or to desired doneness. Remove to a platter and allow steaks to rest 5 minutes, keeping warm.
  • At the same time, heat a large skillet over medium-high heat. Add oil. When oil is hot, add remaining ingredients and saute until crisp tender, stirring frequently; about 8 minutes. Season vegetables with salt and pepper.
  • Serve steaks with sauteed vegetables over steak.
