Quinoa Omelette Bites

Approximate cooking time: 25 minutes

Serves 4

Ingredients:

  • 1 cup cooked quinoa, warmed
  • 1/2 cup shredded mozzarella or cheddar
  • 2 egg whites
  • 1 clove garlic, minced
  • 1 teaspoon salt
  • 1/3 cup chopped fresh spinach leaves
  • Add vegetables like sweet pepper, mushrooms, tomatoes, etc.(optional)
  • 1 drop DoTerra Basil essential oil or chopped basil (optional)

Directions:

  1. Preheat oven to 350 degrees and spray a mini muffin tin with cooking spray.
  2. In a medium bowl, mix warm quinoa with cheese to melt the cheese.
  3. Add egg whites, garlic, salt, essential oil, and spinach leaves. Stir to combine.
  4. Spoon mixture into mini muffin tins, filling to the top.
  5. Bake at 350 degrees for 20 minutes, or until it starts to brown. Remove from oven and let cool for 10 minutes. Run a small knife around the edges to loosen and pop out of the muffin tin and enjoy!
