Peppered Flank Steak

Approximate cooking time: 25 minutes

Serves 4

Ingredients:

  • 1 1/2 lbs flank or skirt steak
  • 1 tsp freshly ground black pepper
  • 3 garlic cloves, minced or pressed
  • 1/4 tsp salt
  • 1 tsp olive oil
  • 1 tbsp balsamic vinegar
  • 2 tbsp lemon juice

Directions:

  1. Trim fat from steak. Rub meat all over with pepper, garlic and salt.
  2. Heat oil in a large skillet over medium high heat. Add steak; cook 6 minutes on each side or until steak is desired degree of doneness, basting with vinegar. Allow steak to rest 5 minutes prior to slicing. Cut steak across grain into thin slices. Drizzle lemon juice over steak and serve.
