Momma's Meatballs

Approximate cooking time: 45 minutes

Serves 4

Ingredients

  • 1 1/2 lbs ground beef (can substitute ground pork or ground turkey)
  • 1 onion, chopped
  • 1 large egg
  • 1/4 cup of Betty Crocker’s Potato Buds
  • 1 tsp basil

Directions

  • Pre-heat oven to 350 degrees.
  • Place beef, onion, egg and basil in a large mixing bowl and blend together with your hands.  Slowly add in the Potato Buds until you get a nice texture for meatballs.
  • Mold  the mixture into about 1 1/2 inch balls and place on a oven-safe pan lined with aluminum foil.
  • Bake for approximately 45 minutes.
  • Serve warm over gluten free pasta or spaghetti squash.
