Garlic Pasta with Broccoli

Approximate cooking time: 30 minutes

Serves 4

Ingredients:

  • 8 oz gluten free pasta, cooked (try Tinkyada brand)
  • 1 tbsp unsalted butter
  • 3 tbsp olive oil
  • 2 garlic cloves, minced
  • 2 1/2 lbs broccoli, chopped
  • 2 tbsp grated Parmesan cheese (optional for serving)

Directions:

  1. Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Stir in the gluten free pasta and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still al dente. Drain.
  2. Heat a skillet over medium high heat. Add olive oil and butter. Add garlic and cook 30 seconds.
  3. Add broccoli and stir. Season with salt and pepper. Cook until tender, about 5 minutes.
  4. Toss gently with pasta and serve topped with grated parmesan.
