Chicken and Melon Salad

Approximate cooking time: 20 minutes

Serves 4

Ingredients:

  • 4 (6 0z) boneless, skinless chicken breasts
  • 1/2 cup light lime vinaigrette
  • mixed salad greens
  • 1 small cantaloupe, halved, seeded, peeled and diced
  • 3 tbsp fresh mint, chopped
  • 1/4 cup walnuts, chopped

Directions:

  1. Place chicken and vinaigrette in a large bowl to marinate. Refrigerate for approximately 4 hours.
  2. Heat oil in a large, nonstick skillet over medium heat.
  3. Add chicken and cook covered for 5 to 6 minutes on each side or until browned.
  4. Let the chicken sit for about 5 minutes, then cut into thin strips.
  5. Place salad greens onto plate, top with sliced chicken, cantaloupe, mint and walnuts (optional).
  6. Drizzle with remaining vinaigrette if desired.
