Cauliflower with Red Peppered Garlic Oil

Approximate cooking time: 15 minutes

Serves 4

Ingredients:

  • 1 head of cauliflower, washed and cut into florets
  • 3 tbsp olive oil
  • 5 garlic cloves, thinly sliced lengthwise
  • 1/2 tsp crushed red pepper flakes
  • 1/4 cup water
  • 1/4 cup fresh grated parmesan cheese

Directions:

  1. Heat oil in large skillet (which has a lid). Add garlic cloves and saute until soft but not burned. Watch carefully as once they burn you must throw out and start over.
  2. Add red pepper flakes. Add cauliflower and saute for 2 minutes. Add water, cover and lower heat to med/low until cauliflower is done to your taste.
  3. Put cauliflower in serving bowl. Top with parmesan.
