Cauliflower Chopped Salad

Approximate prep time: 10 minutes

Serves 4

Ingredients:

  • 1 cup carrots, shredded
  • 1 cup cauliflower, diced
  • 1/2 cup pecans, chopped
  • 1 cup spinach or other arugula
  • Oil and vinegar
  • Salt and ground pepper, to taste

Directions:

  1. Dice cauliflower into 1/4 inch slices.
  2. Tear greens into small pieces.
  3. Toss all ingredients together with oil and vinegar.  Add salt and pepper to taste and serve.
