Barbecue Lemon Chicken

Approximate cooking time: 45 minutes

Serves 4

Ingredients:

  • 4 large chicken leg quarters
  • 1 lemon, squeezed
  • 1/2 stick butter
  • 1 tsp black pepper
  • 2 tbsp olive oil or coconut oil
  • 1 tsp garlic powder
  • 1 tsp sea salt

Directions:

  1. Prepare grill by preheating to medium high heat. Lightly oil grill grate. Lay out chickens and rub with oil. Season with garlic powder and seasoned salt.
  2. In a pan, melt butter over medium-low heat; add lemon juice, pepper and vinegar.
  3. Note: Chicken may be roasted in oven instead of grilling. If roasting in oven, cook at 375 degrees for 35-40 minutes or until instant-read thermometer reads 165 degrees F.
  4. Grill chicken, covered. Basting frequently with lemon/butter mixture, and flip the chicken regularly.
  5. After 30 minutes of cooking, stop the basting to allow the skin to crisp up; about 10 minutes. Cook chicken to internal temperature of 165 degrees F.
