Banana Bread

Approximate prep time: 45 minutes

Serves 6

Ingredients

  • 3 extra ripe Bananas, mashed
  • ¼ cup Butter, melted
  • ¼ cup Maple Syrup
  • 2 teaspoons gluten free Vanilla Extract
  • 2 Eggs
  • ¼ cup Coconut Flour
  • 1 cup Millet Flour
  • 2 teaspoons Baking Powder
  • 1 teaspoon Cinnamon

Directions

  • Preheat the oven to 350 degrees.
  • In a large bowl mix bananas, butter, syrup, vanilla extract and eggs.
  • In a small bowl mix the coconut flour, millet flour, baking powder, cinnamon.
  • Stir the dry ingredients into the wet, mix until most of the lumps are gone.
  • Pour the batter into a greased loaf pan.
  • Bake for about 45 minutes, or until a toothpick inserted into the center of the loaf comes out clean (the top should be nicely golden).
