Balsamic Succotash

Approximate cooking time: 15 minutes

Serves 4

Ingredients

  • 2 tablespoons butter
  • 1 chopped yellow onion
  • 1 garlic clove, minced
  • 2 cups frozen corn kernels
  • 1 chopped red bell pepper
  • 1 teaspoon dried basil
  • 1 (10-ounce) package frozen baby lima beans
  • 1/2 cup fat-free, less-sodium gluten free chicken broth (We recommend Pacific Natural Foods brand)
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 1 tablespoon balsamic vinegar

Directions

  • Melt butter in a large nonstick skillet over medium heat.
  • Add onion and garlic; cook 3 minutes or until onion softens, stirring occasionally.
  • Add corn, bell pepper, basil, and beans; cook 4 minutes, stirring occasionally.
  • Add broth, sugar, salt, and black pepper; cook 7 minutes or until liquid almost evaporates.
  • Remove from heat, stir in vinegar and serve.
