Balsamic Pepper Chicken

Approximate cooking time: 20 minutes

Serves 4

Ingredients:

  • 4 boneless skinless chicken breasts
  • 2 tsp lemon-pepper seasoning
  • 2 tsp olive oil
  • 1/3 cup balsamic vinegar
  • 1/4 cup gluten free chicken broth (Try Pacific Naturals brand
  • 2 garlic cloves, minced

Directions:

  1. Sprinkle lemon pepper on both sides of the chicken. In a skillet, heat oil over medium heat. Add chicken and cook for 5 to 7 minutes on each side or until chicken is no longer pink inside. Remove chicken to a serving platter and keep it warm.
  2. Mix vinegar, broth and garlic and add to the skillet. Stir cook over medium high heat for about 2 minutes or until the mixture is reduced and slightly thickened. Pour sauce over chicken breasts and serve.
