Baked Southwestern Tilapia

Approximate cooking time: 10 minutes

Serves 4

Ingredients:

  • 4 (6 oz) tilapia fillets
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1/4 tsp cayenne pepper
  • 2 tbsp extra virgin olive oil
  • 1 lime, cut into wedges

Directions:

  1. Preheat oven to 450°F.
  2. In a small bowl, mix garlic powder, chili powder and cayenne. Season fish with salt and pepper on both sides. Sprinkle spice mixture evenly over both sides of tilapia.
  3. Coat a baking sheet with 1 tablespoon of the oil. Arrange tilapia in a single layer on the baking sheet. Drizzle tilapia with the remaining tablespoon of oil and bake until golden brown and flesh begins to flake, 7 to 9 minutes.
  4. Serve with lime wedges on the side.
