Baked Sole with Tomatoes and Garlic

Approximate cooking time: 10 minutes

Serves 4

Ingredients:

  • 4 tbsp extra virgin olive oil
  • 4 (6.0 oz) sole fillet
  • 2 medium tomatoes, seeded and chopped
  • 2 garlic cloves, minced
  • 2 tbsp fresh parsley, chopped
  • salt and pepper, to taste

Directions:

  1. Preheat oven to 400 degrees F.
  2. Brush a shallow baking dish with some olive oil.
  3. Place fillets in dish and season with salt and pepper to taste.
  4. Combine remaining olive oil with tomato and garlic in a bowl. Spoon over fillets.
  5. Bake about 10 minutes, or until cooked through. Serve fish sprinkled with parsley.
