Baked Parmesan Flounder Fillets

Approximate cooking time: 10 minutes

Serves 4

Ingredients:

  • 1 1/2 lbs flounder fillets
  • 2 tbsp lemon juice
  • 1/4 cup mayonnaise
  • 2 tbsp onion, chopped
  • 1/4 cup parmesan cheese
  • 1/4 cup butter
  • salt and pepper, to taste

Directions:

  1. Preheat oven to 450F.
  2. Place flounder on greased cookie sheet. Pour lemon juice over fish. Combine rest of ingredients and set aside.
  3. Bake fish for 6-8 minutes until fish flakes with a fork. Remove from oven. Spread cheese mixture on top of fish.
  4. Put back in the oven and broil until cheese has melted and top is light brown, about 3-4 minutes. Serve immediately.
