BAKED BLUEBERRY AND APPLE OATMEAL

I absolutely love oatmeal.  When I was growing up, without fail I would have two packets of instant oatmeal (strawberries and cream, please!) for breakfast.  I could eat it all the time.  Unfortunately, within the last few years I realized how much sugar is in those various flavors of packet oatmeal – they weren’t as good for me as I thought.

I stopped eating quite so much oatmeal and until this past winter never really gave it a second thought.  Then I discovered this baked oatmeal.  It’s so much better for you and even has real fruit.  And it’s still sweet – don’t worry.

Ingredients
  • 1 cup rolled oats
  • ½ cup walnuts, chopped
  • ½ teaspoon baking powder
  • ¾ teaspoon cinnamon
  • pinch of salt
  • ¼ cup maple syrup
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted and cooled slightly
  • 1 teaspoon vanilla extract
  • 2 small apples, peeled and cut into ¾ inch cubes
  • 1 cup blueberries (preferably fresh, but I’ve used frozen and that works too)
Instructions
  1. Preheat the oven to 375 degrees. Spray a 2-quart baking dish with non-stick cooking spray. Set aside.
  2. In a small bowl, mix together the oats, ¼ cup of the walnuts, baking powder, cinnamon and salt.
  3. In another small bowl, whisk together the maple syrup, milk, egg, butter and vanilla extract.
  4. Place the chopped apples in the bottom of the prepared baking dish. Top with half of the blueberries. Evenly distribute the oat mixture over the fruit. Pour the liquid ingredients over the oat mixture as evenly as possible. Sprinkle with the remaining walnuts and blueberries.
  5. Bake for 35 to 40 minutes, until golden brown and the oats have set. Let cool for about 5 minutes before serving.
