Avocado & Egg Salad

Serves 4

Ingredients

  • 6 hard-boiled eggs, peeled and sliced
  • 2 avocados – peeled, pitted, and cubed
  • 1/2 tbs minced red onion
  • 1 tbs yellow mustard
  • 1/3 cup mayonnaise
  • salt and pepper, to taste

Directions

  • Mash the hard-boiled eggs with a fork in a large mixing bowl.
  • Add the avocado, onion, pickle, mustard, and mayonnaise.
  • Gently mix the ingredients together until blended. Season to taste with salt and pepper
