Avocado and Tuna Lettuce Wraps

Approximate prep time: 10 minutes

Serves 1

Ingredients:

  • 1 (5 oz) can of wild albacore tuna in water
  • 1 scallion, thinly sliced
  • 1/2 jalapeno, diced small
  • 1/2 medium avocado
  • 1/2 lime
  • Kosher salt
  • Freshly-ground black pepper
  • 2 Romaine lettuce leaves

Directions:

  1. Open a can of tuna, drain the water and empty the tuna into a medium-sized bowl.   Gently break up the meat with a fork.
  2. Dice the scallions and jalapeño, then add to the bowl of tuna.
  3. Mix in salt, pepper, and a spritz of lime.
  4. In a separate bowl, mash half an avocado with salt, and the rest of the lime juice.
  5. When the guacamole is ready, add it to the bowl with tuna and mash with other ingredients.
  6. Scoop half of the mixture onto each slice of romaine lettuce and serve.
