Artichoke Salad

Approximate cooking time: 10 minutes

Serves 4

Ingredients:

  • 1 (14.5 oz) can quartered artichoke hearts, drained and chopped
  • 1 large tomato, diced
  • 1/4 cup fresh parsley (or basil), chopped
  • 1 tbsp balsamic vinaigrette
  • salt and pepper, to taste

Directions:

  1. In a medium bowl, combine artichoke hearts, tomato, parsley and balsamic vinaigrette.  Toss gently.  Salt and pepper to taste.
